Description   If you bring your own container, you can take away up to 15 gallons of our reverse osmosis filtered water. Our incoming well water is filtered down to only 9 to 10ppm total solids. The typical brewing salts breakdown of the R.O. is as follows: Ca: 2.8 Mg: 0.6 Na: 0.6 Cl: 2.4 SO4: 3.4 HCO3: 3.2 Long story short, you will need to add some salts to get the calcium up to the minimum recommended 50ppm. Note that the water must be boiled at some point (as opposed to topping up your wort after it's already chilled). R.O. water that has been stored in a tank should be assumed to contain bacteria that must be destroyed with heat. This means if you plan to use the water to make mead, it should be boiled and cooled before mixing the honey in.
