These 304SS locknuts have NPS straight thread so they will thread all the way down the threads of any NPT fitting. Available in 1/4", 1/2" and 1" NPS sizes. Note: This 1/4" NPS size does NOT have an oring groove. It is flat on both sides.

You can get these separately here, but they are also included in the thermometer "make weldless" kits which an easier way to order if you need a gasket and washer also.
