Raw honey is simply harvested out of hives and strained through a coarse strainer just to remove any debris such as bees wax. This retains the delicate flavor and aromatics of the honey vs. honey that has been heated and pasteurized.

Alfalfa is a legume with blue flowers. It blooms throughout the summer and is ranked as the most important honey plant in Utah, Nevada, Idaho, Oregon and most of the western states. Alfalfa honey is white or extra light amber in color with a fine flavor.

Raw honey may crystalize over time and it is not an indication of staling in any way. Just warm up the container in a pool of warm water and it will liquefy again.
