Description

When you're feeling a little palate fatigue from countless liters of helles and marzen and want to get punched by deep malty richness, close the night out with a few Munich Dunkels. This style retains the drinkability of all the fine fest style lager beers but amps up the toasty rich malt character. We primarily use Weyermann Barke Munich malt to make this happen (hence the quirky name).

What is Barke®? An heirloom 2-row spring barley revived for its intense malt character and old-world aroma. Higher protein, better head, more flavor than modern high-yield barley.
Tastes like a liquid loaf of fresh Bauernbrot with honey. Finishes dry, clean, and makes you want another stein.

As a true lager beer, these are your fermentation options in order of preference:
Pitch 2 packs of Omega OYL-114 (Bobby's preference), Omega OYL-107, or White Labs WLP820 (or make a 2 liter starter from one pack of any of those) and ferment at 50F.... or

Pitch 2 packs of Saflager W34/70 or Cellar Science "GERMAN: dry yeast and ferment at 50F.... or
Pitch 1 pack of Saflager W34/70 or Cellar Science "GERMAN" and ferment in the low to mid 60's (the sacrifice of this option is increased fruity esters and less lager like profile)

If you absolutely must ferment this at 70F or above, a pack of of Safale K-97 will work.

If you plan to bottle condition, be sure you have 4-5 ounces of priming sugar. You can purchase that as an accessory as well.
For emphasis: This kit does not include yeast, it must be selected from the accessories list on the right.

Other acceptable modifications to this recipe:
  • this is a good base recipe for making into a darker pumpkin beer if you're the type of person to make pumpkin beers. We won't judge you. You don't need to add actual pumpkin, just add pumpkin pie spices into the fermenter. Another great option is to make a tincture of pumpkin pie spices by soaking in a couple shots of vodka. Then you can bottle some regular beer first and then dose the last half of the beer in the bottling bucket with some of the spiced vodka. Variety wins!
