We know. This is a steep batch cost. Extract is expensive. Now that we got that out of the way, let's talk about why you want to make this beer. It's big, chewy, rich and boozy. It's the perfect cold weather sipper. The rub is that it really needs to sit around in the bottle/keg for at least 6 months to smooth out so you have to brew it during a season you would normally have no interest in it. Early to late spring is a perfect time to brew this so it's coming into perfection just around Thanksgiving or so.

The kit includes all the steeping grains, malt extract, hops, yeast, bottling sugar, bottle caps, and heavy toasted oak chips.

You supply about a 1/2 cup of whatever spirits you want the barrel character to emulate. We like Bourbon or Rum, but use your imagination. Optionally you can add some real vanilla extract during bottling for extra complexity.

You will need a boiling pot of at least 16 quarts and 6 gallons of bottled, distilled water. A big bag of ice for chilling the kettle down after the boil is also recommended if you do not have an immersion chilling coil.
