I'm a new mead maker and decided to try D47 for my first traditional mead following a "recipe" I found onlline (3lbs honey+ water to 1gal). The must OG was 1.115 and the fermentation stalled about halfway. I gave it some nutrient and a swirl to degas and it restarted to finish at FG 1.000. My basement temps were around 73F which may have been too high for this yeast?? Some say max 68F. The ethanol flavor is quite strong.
