Description

This is a new twist on our best selling West Coast IPA kit. Many of our long time regular customers have brewed the original recipe many times so we're offering this variation for those looking for something a little different. Sure, West Coast IPA has taken a back seat to New England style hazy IPA for several years but the relatively clear and bitter OG is making a comeback.

Our "Flight of Apollo" recipe uses a pretty simple grain bill with 2 Row, Vienna, Wheat, and a light hand of caramel malt coupled with Apollo and Falconer's Flight for a citrus and pine party.

This beer will do well with either a direct pitch of Omega West Coast or a pack of dry US-05. All yeast options are listed as an accessory on the right. If you plan to bottle condition, be sure you have 4 ounces of priming sugar. You can purchase that as an accessory as well.
For emphasis: This kit does not include yeast, it must be selected from the accessories list on the right.

Assuming 72% efficiency into the boil kettle:
Est Original Gravity: 1.070 SG
Est Final Gravity: 1.015 SG
Estimated Alcohol by Vol: 7 %
Bitterness: 61 IBUs
Est Color: 9 SRM
Mash at 152F

Other acceptable modifications to this recipe:

Add one extra pound of 2 Row malt to boost ABV by .5% which would be a good idea if you BIAB.
Add one ounce of Apollo or Falconer's Flight (or both) if you want to dry hop in the fermenter to boost hop aroma.

Water:
If you are a meticulous brewer that treats water like the ingredient that it is, it would be great to start with either RO or Distilled water with the following added:

1/4 tsp Calcium Chloride

1/2 tsp Gypsum

1 pinch of table salt

3mL of lactic acid

If you're starting with tap water or well water with unknown ion concentrations (never tested), leave out the salts and just add the acid to give you a better chance of keeping your mash pH in check. If you have chlorine in your tap water, crush and add half a campden tablet or a tiny pinch of powdered Potassium Metabisulfite.
