The ITC-310 is similar to the slightly cheaper ITC-308 that we sell but this unit adds a programmable temperature profile over a programmable time period. Why do you want this? Fermentation is a complex process. Of course fermenting at fixed and stable temperature is a bare minimum for high quality results, but there are reasons to change temperatures deliberately. One example is staggered ramping up for Saison ferments. There's also diacytel rests in lager fermentations, cold crashing, and some people prefer a few degrees of rise on ales towards the end of fermentation to ensure a dry finish.
You'll need a refrigerator that will fit your desired fermenter and if you want to make use of the heating function, you'll need a heat source that can either add heat to the inside of the refrigerator's airspace or directly to the fermenter like our fermwrap. The temperature probe that is part of this controller can either be secured to the outside of your fermenter or slid into any of our thermowells. You may also be interested in our heat wrap.
The probe diameter included with the controller is approximately .2" or 5mm (and 2" long) which will fit into either our small or large tube thermowells. It fits the smaller tube with a precise fit so that would be preferable in a horizontal install. If you install the thermowell through the lid of a fermenter, the large tube version will be fine as long as you bottom out the sensor in the end of the thermowell.
