This is a very style accurate American Stout and the reason we know this is that it [bragging] scored a 48 out of 50 in BJCP competition [/bragging]. This tracks with our philosophy of not offering recipe kits that have not been properly vetted.

American stout is a rather bold and roasty beer with an equally firm hop bitterness. It has more drinkability than an imperial stout and less hop character than a Black IPA. The finish is moderately dry and bitter but without excessive astringency.

This beer will do well with either White Labs WLP001 or Omega OYL-004 built up in a 1 liter starter (or two packs if you don't want to use a starter) or two packs of US-05 dry yeast (select these as accessories in the accessory list). If you plan to bottle condition, be sure you have 4-5 ounces of priming sugar. You can purchase that as an accessory as well.

For emphasis: This kit does not include yeast, it must be selected from the accessories list on the right.

Water:
Depending on how obsessive you are about repeating the success we've had with this recipe, you may want to know about the water we use. The easiest way is to start with distilled or RO water and add the following:

Calcium Chloride: 3g
Calcium Sulfate (gypsum): 3.5g
Canning/Table Salt: 1g
Lactic Acid 88%: 4mL

These amounts assume a total of 8.5 gallons (such as for BIAB no sparge brewing). If you use more water for a different process, simply scale the additions proportionately.

If you are modifying your existing water source, just get your calcium up to about 50ppm. If you have very hard water you may need a few extra mL of lactic acid. It's hard to know specifically what you should do without a full water report which is why we like RO or distilled so much.

Amazing recipe, hit my numbers bang on! Helps I’m brewing on an electric BIAB setup Bobby custom built for me (which is awesome) 3 weeks in the fermenter (no secondary) sitting in my basement, low to mid 60s, kegged and put on nitro, slightly deceptively strong and DELICIOUS!!!
