SafAle™ W-68 is a world-renowned yeast strain coming from Weihenstephan in the north of Munich area, it’s the yeast you need to brew the classic wheat beer styles that only Germany can offer: Hefeweizen, Dunkelweizen, Weizenbock, etc. Considering the Reinheitsgebot rule in Germany, this yeast has been selected to express by itself, without the addition of any other ingredients, a balanced banana and clove profile. Expect aromatics with prominent banana / tutti frutti notes and a moderate phenolic flavor. Phenol clove notes will be brought out naturally with the high percentage of wheat contained in German wheat beers recipes.
