Due to popular request, we have another iteration of HAZY IPA in kit form to offer. Jolly Kiwis is an immersion into the bountiful tropical flavors of New Zealand grown hops.

Here is a composite of the typical flavors and aromas of the three varieties of hops contained in this recipe:
Lemon, Lime, Tropical, Passion Fruit, Grapefruit, White Wine


The best dry yeast for this recipe, in our experience, would be Verdant and you'd only need a single pack. If you're a stickler for liquid cultures, go with either Whitelabs London Fog or Omega Brit V (OYL-011) and in both cases we recommend either a 2 liter starter or two packs per 5-6 gallon batch.

For emphasis: This kit does not include yeast, it must be selected from the accessories list on the right.

If you plan to bottle condition, be sure you have 4 ounces of priming sugar. You can purchase that as an accessory as well.

Let's have a real talk about this style of beer. It's not easy. You have to do a lot of things right all the way through to prevent ruining the beer with oxygen exposure. Generally the best way to maximize success is to keg the beer using oxygen-free transfers. If you have to bottle condition, the best way to minimize oxygen exposure is to skip racking into a bottling bucket for bulk priming. In this case, you can use bottle conditioning tablets added to each bottle and racking directly from the primary into the bottles. Be sure to cap ASAP. This method benefits from having a helper so you can limit the movement of the racking cane/auto siphon to prevent stirring up the sediment in the primary fermenter and someone can quickly crimp the caps for you to limit exposure.

Water: If you want to be meticulous about this, we start with distilled or RO water and add calcium chloride and gypsum to about 150ppm Chloride and 60ppm Sulfate. If you're not ready for that type of thing, you can use the balanced version of our magic minerals as long as you start with distilled water. If you must use your tap water, please at least add a small pinch of Potassium Metabisulfite to remove the chlorine.
