This recipe has a relatively quirky grain bill if we're being honest but it has won several gold and silver medals in the last 2 years that staff and friends have been using it. Does it have to be exactly this grain bill? We don't know but why screw around with magic?

Mashed at 156F, this beer will not need gimmicks like lactose. The mouthfeel is silky smooth and supports the hefty late hopping schedule. This version of the NEIPA kit features Azacca and Citra hops. You'll see additional options in the future. The hop character of this particular recipe is quite tropical with notes of Mango, Pineapple, and mixed Citrus (with little to no pine and spice).

This beer will do well with either Whitelabs London Fog or Omega Brit V (OYL-011) and in both cases we recommend either a 2 liter starter or two packs per 5-6 gallon batch. The closest dry yeast would be Verdant and you'd only need a single pack. For emphasis: This kit does not include yeast, it must be selected from the accessories list on the right.

If you plan to bottle condition, be sure you have 4 ounces of priming sugar. You can purchase that as an accessory as well.

Let's have a real talk about this style of beer. It's not easy. You have to do a lot of things right all the way through to prevent ruining the beer with oxygen exposure. Generally the best way to maximize success is to keg the beer using oxygen-free transfers. If you have to bottle condition, do everything in your power to reduce splashing and oxygen exposure (one idea is to use a 5 gallon carboy for your bottling tank and get bottles capped as soon as possible.

Water: If you want to be meticulous about this, we start with distilled or RO water and add calcium chloride and gypsum to about 150ppm Chloride and 60ppm Sulfate. If you're not ready for that type of thing, you can use the balanced version of our magic minerals as long as you start with distilled water. If you must use your tap water, please at least add a small pinch of Potassium Metabisulfite to remove the chlorine.
