This German Kolsch recipe is a very approachable fair weather beer clocking in around 5% ABV and is pale yellow as the picture shows.

This is a relatively simple recipe with a tiny bit of Melanoidin, Victory and Crystal malts steeped to add some toasted/kilned malt character that you'd get from Vienna and Munich base malts. If you want to really nail the clean, almost lager-like smoothness, you'll want to ferment in the low 60's for low esters.

The recipe is designed to have 3 gallons of water in the boil pot at the start of the boil, which requires at least a 16 quart/ 4 gallon pot.
